know that pressing is a process for separating the juice from the pulp
of things like grapes, olives and oranges. Garlic juice contains flavor,
aroma, amino acids, sulfides and a bunch of natural sugars. In other
words, complex chemistry. Garlic’s sugars are responsible for it’s
stickiness. Press those sugars out and you have an imbalance. You have
more pulp than juice. Garlic pulp is bitter without garlic’s natural
sweetener. Pressing garlic means that you use the most bitter part of
the garlic in your recipes. When you use the plate, everything in the
